Kurczak w mleczku kokosowym/Chicken in coconut milk



Dzisiejsze danie jest inspirowane ogólnie pojętą kuchnią azjatycką. Zawiera imbir, mleko kokosowe i sok z limonki, czyli składniki typowe dla tamtejszych kuchni. Uwielbiam zapach czosnku prażonego z imbirem – jest świeży i ostry, rozgrzewający zmysły. Jeśli macie pod ręką papryczkę chili i lubicie ostre smaki, możecie śmiało dodać ją do smażonego czosnku i imbiru.

Today's recipe is inspired by generally understood Asian cuisine. It contains ginger, coconut milk and lime juice, or typical components of the Asian cuisine. I love the smell of garlic roasted with ginger – it’s fresh and spicy, warming the senses. If you have at hand some chili and you like spicy flavors, go ahead and add it to the fried garlic and ginger.




Kurczak w mleczku kokosowym


Składniki (2 porcje)

2 średnie filety z kurczaka
1 szalotka
1 duży ząbek czosnku
1 cm kawałek świeżego imbiru
200 ml mleka kokosowego
sos sojowy, pieprz do smaku
sok z limonki do smaku
olej do smażenia


Przygotowanie

Na patelni rozgrzać olej. Szalotkę obrać i drobno pokroić, wrzucić na rozgrzany olej i smażyć na małym ogniu ok. 3 min. Imbir obrać (najlepiej łyżeczką) i zetrzeć na tarce. Dodać do szalotki i smażyć ok. 1 min. Czosnek obrać, drobno posiekać, dodać do szalotki i imbiru i smażyć jeszcze ok. 1 min.

Kurczaka opłukać, dokładnie osuszyć, pokroić w małą kostkę i wrzucić na patelnię. Smażyć ok. 6-7 min. Wlać mleko kokosowe, sos sojowy i pieprz, dokładnie wymieszać i gotować na małym ogniu ok. 5 min. 

Zdjąć z ognia i skropić sokiem z limonki.

Podawać z ryżem basmati lub jaśminowym oraz połówką limonki.

Chicken in coconut milk


Ingredients (serves 2)

2 medium chicken fillets
1 shallot
1 large clove garlic
1 cm piece fresh ginger
200 ml coconut milk
soy sauce, pepper to taste
lime juice to taste
oil for frying


Method

In a skillet, heat the oil. Peel shallot and cut into small pieces, add to the hot oil and fry on low heat for about 3 minutes. Peel ginger (preferably with a teaspoon) and grate it, adding to shallot and fry for about 1 minute. Peel and finely chop garlic, add to shallot and ginger and cook for about 1 more minute. 

Rinse chicken, dry it thoroughly, cut into small cubes and toss into the pan. Fry for about 6-7 minutes. Pour the coconut milk, soy sauce and pepper, mix everything well and cook on low heat for about 5 minutes. 

Remove from heat and pour lime juice over.

Serve with basmati or jasmine rice and half lime.
