Racuchy z jabłkami/Polish yeast fritters with apples

Racuchy to u nas wigilijna tradycja rodzinna. Mimo że podczas kolacji wigilijnej zawsze królowały babcine "czyste" racuchy, ja wolę te z jabłkami.

Yeast fritters are our Christmas Eve family tradition. Even though the Grandma's "pure" fritters always ruled during the Christmas dinner, I prefer those with apples.






Racuchy z jabłkami
(na podstawie "O jabłkach" Eliza Mórawska)


Składniki (ok. 20-22 racuchy)

250 g mąki
20 g świeżych drożdży
250 ml mleka
szczypta soli
2 jajka
20 g roztopionego i ostudzonego masła
2 jabłka
olej do smażenia

Do podania
cukier puder


Przygotowanie

Wszystkie składniki powinny być w temperaturze pokojowej.

Mąkę przesiać do miski. Wkruszyć drożdże i zalać odrobiną mleka. Odstawić na kilka minut.

Jajka roztrzepać w misce. Dodać sól, resztę mleka i masło i dokładnie wymieszać. Masę wlać do mąki z drożdżami i dokładnie wymieszać trzepaczką do powstania jednolitej, gładkiej masy.

Przykryć ściereczką i odstawić w ciepłe miejsce (np. obok kaloryfera) do wyrośnięcia na 1-1,5 h.

Jabłka opłukać, obrać, usunąć gniazda nasienne i pokroić w małą kostkę. Wrzucić do wyrośniętego ciasta i dokładnie wymieszać.

Na dużej, głębokiej patelni rozgrzać sporą ilość oleju (tak aby racuchy mogły swobodnie w nim pływać). Na olej wrzucić kroplę ciasta - jeśli wypłynie i zaczną się koło niego tworzyć pęcherzyki, można zacząć smażyć racuchy.

Ustawić średni ogień i nabierając ciasto łyżką, kłaść je na rozgrzany olej. Najlepiej smażyć 4-5 racuchy na raz (nie więcej). Kiedy spód zacznie brązowieć, a na wierzchu ciasta pojawią się pęcherzyki, przewrócić racuchy na drugą stronę. Smażyć aż będą złote z obu stron.

Wyłowić z oleju i położyć na talerzu wyłożonym papierowym ręcznikiem. Kontynuować z resztą ciasta.

Ostudzone racuchy posypać cukrem pudrem.

Polish yeast fritters with apples
(based on "On apples" Eliza Mórawska)


Ingredients (for about 20-22 fritters)

250 g flour
20 g fresh yeast
250 ml milk
pinch of salt
2 eggs
20 g butter, melted and cooled
2 apples
oil for frying

To serve
icing sugar


Method

All ingredients should be at room temperature.

Sift the flour into a bowl. Crumble the yeast in and pour a little milk over. Set aside for a few minutes.

In a bowl, beat eggs. Add salt, remaining milk and butter and mix thoroughly. Pour the batter into the flour with the yeast and mix thoroughly with a whisk until a smooth mass.

Cover with a cloth and leave in a warm place (eg. next to the radiator) to rise for 1-1.5 h.

Rinse apples, peel them, remove seeds and cut into small cubes. Toss into the risen dough and mix thoroughly.

In a large, deep pan, heat a large amount of oil (so that the fritters float in it). Throw a drop of  dough to the
oil - if it comes out and there are bubbles around it, you can begin to fry.

Set an
average fire and taking the dough with a spoon, put it in hot oil. Fry 4-5 fritters at a time (not more). When the bottom starts to brown and bubbles appear on top of the dough, turn them over. Fry until they are golden on both sides.

Pick up from the oil and place on a plate lined with paper towel. Continue with the rest of the dough.

Once cooled, sprinkle with icing sugar.
