Zupa cebulowa/Onion soup

Kolejny francuski klasyk. Świetna na zimne dni.

Another French classic. Great for cold days.





Zupa cebulowa
(inspiracja: "My Paris kitchen" David Lebovitz)


Składniki

1 kg cebuli
2 łyżki masła
1 łyżka cukru
1,5 l bulionu drobiowego
2 ząbki czosnku
180 ml białego wytrawnego wina
sól, pieprz
1-2 łyżki białego octu winnego

Do podania
bagietka
ser (użyłam francuskiego Emmental)



Przygotowanie

Cebulę obrać i pokroić w piórka. Na patelni roztopić masło. Wrzucić cebulę, posypać cukrem i smażyć na niewielkim ogniu przez 20 min., od czasu do czasu mieszając.

Czosnek obrać i drobno pokroić. Dodać do cebuli. Doprawić solą i pieprzem i smażyć aż cebula nabierze karmelowego koloru i zacznie się rozpadać (u mnie ok. 30 min.).

Dodać wino i lekko odparować. Zalać bulionem i gotować na małym ogniu, pod przykryciem 45 min.

Dodać ocet i doprawić do smaku.

Piekarnik nagrzać do 200oC. Bagietkę pokroić. Zupę przelać do żaroodpornych naczyń. Na wierzchu ułożyć kromki bagietki, posypać tartym serem i wstawić do piekarnika. Piec do momentu aż ser się roztopi i zbrązowieje.

Onion soup
(inspired by "My Paris kitchen" David Lebovitz)


Ingredients

1 kg onion
2 tablespoons butter
1 tablespoon sugar
1.5 liters chicken stock
2 cloves garlic
180 ml dry white wine
salt and pepper
1-2 tablespoons white wine vinegar

To serve
baguette
cheese (I used French Emmental)


Method

Peel
and cut onion. In a skillet, melt the butter. Add onions, sprinkle with sugar and cook over low heat for 20 minutes, stirring occasionally.

Peel
and finely chop garlic. Add to the onion. Season with salt and pepper and cook until the onions become caramel brown and begin to fall apart (about 30 minutes).

Add the wine and gently evaporate. Pour chicken stock and simmer, covered, for 45 minutes.

Add the vinegar and season to taste.

Preheat the oven to 200°C.
Slice baguette. Pour into a heat-proof soup dishes. Put slices of baguette on top, sprinkle with grated cheese and put in the oven. Bake until cheese is melted and browned.
