Tarta czekoladowa/Chocolate tart

Na dobry początek roku potrzebne jest czekoladowe uderzenie ;) Przepis na czekoladowe nadzienie pochodzi z książki Michaela Paula "Sweet Paris".

Tarta czekoladowa


Składniki

Ciasto
250 g mąki
3 łyżki mielonych migdałów
3 łyżki drobnego cukru
szczypta soli
100 g zimnego masła + do wysmarowania formy
2 żółtka
kilka łyżek zimnej wody

Nadzienie
300 g ciemnej czekolady
300 ml kremówki
100 g drobnego cukru
1 laska wanilii
25 g masła


Przygotowanie

Ciasto
Mąkę przesiać do miski. Dodać sól, cukier i migdały i dokładnie wymieszać. Masło pokroić na małe kawałki i dodać do mąki. Wyrabiać między palcami do uzyskania kruszonki. Następnie dodać żółtka i ewentualnie dodając po 1 łyżce wody, wyrobić ciasto, formując kulę. Ciasto zawinąć w folię spożywczą i włożyć do lodówki na 1 h.



Piekarnik nagrzać do 180oC.

Ciasto rozwałkować na placek większy niż forma. Formę wysmarować masłem, a następnie wyłożyć ciastem. Przykryć folią aluminiową i obciążyć np. grochem lub fasolą. Wstawić do nagrzanego piekarnika i piec 15 min. Zdjąć folię z obciążeniem i piec aż ciasto nabierze złotego koloru. Wyjąć z piekarnika i wystudzić.

Nadzienie
Czekoladę połamać na niewielkie kawałki i włożyć do miski.

Kremówkę wlać do rondelka. Dodać cukier, ziarenka oraz pustą laskę wanilii. Podgrzewać, mieszając. Doprowadzić do wrzenia i zdjąć z ognia. Wyjąć laskę wanilii. Wlać do czekolady i mieszać (np. trzepaczką) aż do roztopienia. Następnie stopniowo dodawać masło, cały czas mieszając. Masę odstawić do lekkiego przestygnięcia.

Ciepłą (ale nie gorącą) masę przelać na podpieczony spód i wyrównać szpatułką. Całkiem przestudzić, a następnie włożyć do lodówki i schładzać przez kilka godzin, tak aby czekolada była całkiem ścięta.

Można posypać gruboziarnistą solą morską.

Chocolate tart


Ingredients

Pastry
250 g flour
3 tablespoons ground almonds
3 tablespoons caster sugar
pinch of salt
100g cold butter + to grease the mold
2 egg yolks
a few tablespoons of cold water

Filling
300 g dark chocolate
300 ml heavy cream
100g caster sugar
1 vanilla pod
25 g butter


Method

Pastry
Sift the flour into a bowl. Add salt, sugar and almonds and mix thoroughly. Cut butter into small pieces and add to the flour. Knead between your fingers till crumbled. Then add the egg yolks and posiibly adding 1 tablespoon water at a time, knead the dough to form a ball. Wrap the dough in plastic wrap and refrigerate for 1 hour.

Preheat the oven to 180°C.

Roll out the pastry bigger than the mold. Butter the mold, then line with the pastry. Cover with aluminum foil and charge it with eg. beans. Put into preheated oven and bake for 15 minutes. Remove the foil and bake until the pastry becomes golden brown. Remove from the oven and leave it to cool.

Filling
Break the chocolate into small pieces and put in the bowl.

Pour the cream into a saucepan. Add the sugar, vanilla seeds and empty vanilla pod. Heat, stirring. Bring to a boil and remove from the heat. Remove the vanilla pod. Pour the chocolate and mix (eg. with a whisk) until melt. Then, gradually add butter, stirring constantly. Leave the batter to cool slightly.

Pour the warm (but not hot) batter over the pre-baked pastry and level with a spatula. Leave it to cool completely, then put in the fridge for a few hours, so that the chocolate sets well.

You can sprinkle with coarse sea salt.
