Galette des rois

Z ciastem na Święto Trzech Króli, galette des rois, wiąże się miła tradycja. Najmłodszy członek rodziny wskazuje osoby, na których talerze trafiają kolejne porcje ciasta. Ten, kto trafi na figurkę ukrytą w kremie (tradycyjnie był to bób), zostaje królem (lub królową) dnia.

Ten przepis jest połączeniem tradycji i nowoczesności. Pomysł na kształt oraz przykrycie kremu jabłkami zaczerpnęłam z książki Rachel Khoo "Mała francuska kuchnia", jednak krem migdałowy, tzw. frangipane, jest jak najbardziej tradycyjny.

There's a very nice tradition related to the cake on Epiphany, galette des rois. The youngest member of the family indicates the person to which each cake portion goes. Whoever hits the figurine hidden in the cream (traditionally, it was the fava bean), becomes a king (or a queen) of the day.

This recipe is a blend of tradition and modernity. I took the idea for the shape and covering cream with apples from
Rachel Khoo's book "Little French kitchen", but the almond cream called frangipane is traditional.

Składniki

1 opakowanie ciasta francuskiego
1-2 jabłka
150 g mielonych migdałów
100 g bardzo miękkiego masła + do wysmarowania formy
75 g drobnego cukru
szczypta soli
1 jajko


Przygotowanie

Małą tortownicę o szerokości 20-22 cm wysmarować masłem i wyłożyć papierem do pieczenia. Rozłożyć ciasto francuskie i wyciąć z niego okrąg o szerokości podstawy formy. Ułożyć ciasto w formie. Resztę ciasta przykleić do boków tortownicy, dokładnie przyklejając do spodu, tak aby w cieście nie było dziur. Ostrym nożem wyciąć kawałki ciasta, tworząc kształt korony. Wstawić do lodówki na 30 min.

Piekarnik nagrzać do 180oC.

Migdały, sól, cukier i masło zmiksować na gladką masę. Następnie dodać jajko i dokładnie zmiksować. Gotowy krem wyłożyć na schłodzony spód i wyrównać szpatułką.

Opłukać jabłka i wyciąć gniazda nasienne (nie trzeba ich obierać). Pokroić na cienkie plasterki i poukładać na kremie.

Wstawić do nagrzanego piekarnika i piec ok. 45-50 min. aż ciasto nabierze złotego koloru.

Wyjąć z piekarnika i lekko przestudzić.

Ingredients

1 package puff pastry
1-2 apples
150 g ground almonds
100 g very soft butter + to grease the mold
75 g caster sugar
pinch of salt
1 egg


Method

Butter and
line with baking paper a 20-22 cm cake tin. Unfold the puff pastry and cut out the circle with a width of the base of the mold. Place the pastry in the form. Put the rest of the pastry on the sides of the springform, sticking closely to the bottom, so that the pastry doesn't have any holes. Using a sharp knife, cut out the pastry pieces, forming the shape of a crown. Refrigerate for 30 minutes.

Preheat the oven to 180°C.

Mix almonds, salt, sugar and butter to a smooth paste. Then add the egg and mix thoroughly. Put the cream on the cooled base and align with a spatula.

Wash the apples and cut cores (no need to peel them). Cut into thin slices and sort out on the cream.

Put into preheated oven and bake for about 45-50 minutes until the pastry will become golden brown.

Remove from the oven and cool slightly.
