Drożdżówki z malinami i białą czekoladą/ Sweet buns with raspberries and white chocolate

Propozycja dla miłośników malin i białej czekolady. Mięciutkie ciasto drożdżowe z kwaskawymi malinami i słodką czekoladą.

Something for raspberry and white chocolate lovers . Soft dough with acid raspberries and sweet chocolate.








Drożdżówki z malinami i białą czekoladą

Składniki

Ciasto
25 g świeżych drożdży (lub 7 g drożdży instant)
125 ml ciepłego mleka
50 g cukru pudru
szczypta soli
300 g mąki pszennej
2 jajka
2 żółtka
50 g miękkiego masła + do posmarowania formy

Nadzienie
60 g białej czekolady
40 g startych migdałów
1 łyżka cukru wanilinowego
100 g malin (świeżych lub mrożonych)

Ponadto
1 jajko + 1 łyżka mleka do posmarowania ciasta
cukier puder


Przygotowanie

Wszystkie składniki na ciasto muszą mieć temperaturę pokojową.

Świeże drożdże pokruszyć i dodać do ciepłego mleka (mleko musi być ciepłe, ale nie gorące!). Dodać 1 łyżeczkę cukru pudru i 2 łyżeczki mąki, dokładnie wymieszać (aby nie było grudek) i odstawić w ciepłe miejsce na ok. 5-10 min. aż drożdże zaczną działać (spienią się i zaczną rosnąć).

Mąkę przesiać do miski. Dodać resztę cukru pudru i sól oraz spienione drożdże i dobrze wymieszać. Następnie dodać jajka i żółtka i wyrabiać ciasto ręką lub mikserem ok. 10 min. Dodać miękkie masło i wyrabiać aż ciasto nie będzie się kleić do ręki. Włożyć do miski, przykryć ściereczką i odłożyć w ciepłe miejsce na 1-1 1/2 h do wyrośnięcia.

Wyrośnięte ciasto wyłożyć na stolnicę i rozwałkować na średniej wielkości placek. Posypać cukrem wanilinowym, posiekaną czekoladą i migdałami. Rozłożyć maliny. Ciasto zwinąć w rulon i pokroić na kilkucentymetrowe kawałki. Ułożyć w natłuszczonej tortownicy rozcięciem do góry. Odstawić do wyrośnięcia na 1 h.

Piekarnik nagrzać do 180oC.

Wyrośnięte ciasto posmarować jajkiem roztrzepanym z mlekiem. Tortownicę włożyć do piekarnika i piec przez ok. 22 min.

Wyjąć z piekarnika i ostudzić. Posypać cukrem pudrem.

Sweet buns with raspberries and white chocolate

Ingredients

Dough
25 g fresh yeast (or 7 g instant yeast)
125 ml warm milk
50 g icing sugar
pinch of salt
300 g wheat flour
2 eggs
2 egg yolks
50 g soft butter + to grease the mold  

Filling
60 g white chocolate
40 g grated almonds
1 tablespoon vanilla sugar
100 g raspberries (fresh or frozen)

Also
1 egg + 1 tablespoon milk for brushing the buns
icing sugar


Method

All the ingredients for the dough must be at room temperature.

Crumble the fresh yeast and add them to the warm milk (milk must be warm, but not hot!). Add 1 teaspoon icing  sugar and 2 teaspoons flour, mix well (to remove the lumps) and set aside in a warm place for about 5-10 minutes until the yeast will start to work (they will foam up and start to rise).

Sift the flour into a bowl. Add the remaining icing sugar, salt, foamed yeast and mix well. Then add the eggs and egg yolks and knead by hand or with a mixer for about 10 minutes. Add the softened butter and knead until the dough will no longer stick to your hand. Put into a bowl, cover with a cloth and put in a warm place for 1-1 1/2 hours to rise.

Put the risen dough on a pastry board and roll to the medium-sized cake. Sprinkle with sugar, vanilla sugar, chopped chocolate and chopped almonds. Sprinkle  the raspberries over. Roll the dough up and cut into several cm pieces. Place in a greased mold the cut up. Allow to rise for 1 hour.

Preheat the oven to 180oC.
 
Brush the risen dough with egg beaten with milk. Put into the oven and bake for about 22 minutes.
 
Remove from the oven and let it cool. Sprinkle with icing sugar.
