Kurczak z Doliny Auge/The Auge Valley chicken



Przepis na kurczaka prosto z Normandii. Cudownie chrupiąca skórka i rozpływające się w ustach mięso w sosie śmietanowym z pieczarkami. Do sosu można dodać także mały kieliszek calvadosu, aby danie nabrało prawdziwego, normandzkiego charakteru.

Do przygotowania tego dania będziecie potrzebować kurczaka dobrej jakości. Ja miałam akurat kurczaka z wolnego wybiegu. Naprawdę czuć różnicę!


The recipe for chicken straight from Normandy. Wonderfully crispy skin and melting-in-mouth meat in cream sauce with mushrooms. You can also add a small glass of Calvados to the sauce in order to get a true Norman character.

To prepare this dish you will need a good quality chicken. I had a free-range one and you can really feel the difference!

Składniki

1 kurczak (najlepiej z wolnego wybiegu, ekologiczny)
500 g pieczarek
100 ml płynnej śmietanki
oliwa z oliwek
sól, świeżo zmielony pieprz, 2 szczypty gałki muszkatołowej, różowy pieprz do dekoracji


Przygotowanie

Piekarnik nagrzać do 220oC.

Kurczaka opłukać i osuszyć, włożyć do naczynia żaroodpornego wysmarowanego oliwą. Posolić, zmielić pieprz i dokładnie wysmarować oliwą.  Wstawić do piekarnika. Po 15 min. obrócić kurczaka na bok i zmniejszyć temperaturę do 180oC. Piec przez 30 min., a następnie przewrócić na drugi bok. Piec kolejne 30 min. Następnie ułożyć kurczaka filetami do góry, piec jeszcze przez ok. 30-40 min., od czasu do czasu polewając sokiem, który zbiera się w formie. Wyjąć z piekarnika i odstawić do odpoczęcia na ok. 10-15 min.

Pieczarki pokroić i podsmażyć na maśle. Śmietankę wlać do rondelka i zagotować, następnie zmniejszyć ogień i lekko zredukować. Dodać sól, czarny pieprz i gałkę muszkatołową.

Do naczynia, w którym będziemy podawać kurczaka, wlać śmietankę, wrzucić pieczarki. Na sosie ułożyć kurczaka, posypać różowym pieprzem.

Podawać np. z makaronem lub pieczonymi ziemniakami i sałatką.

The Auge Valley chicken
(based on « La cuisine de nos régions » Sylvie Girard-Lagorce)


Ingredients

1 chicken (preferably free-range, organic)
500 g mushrooms
100 ml liquid cream
olive oil
salt, freshly ground pepper , 2 pinches nutmeg, pink pepper for decoration


Method

Preheat the oven to 220°C.

Rinse and dry the chicken, put into a casserole dish greased with olive oil. Season with salt, pepper and grease with oil. Put into the oven. After 15 minutes turn the chicken to one side and reduce the temperature to 180oC. Bake for 30 minutes and then turn over to the other side. Bake for another 30 minutes. Then place the chicken fillets to the top, bake for approximately 30-40 minutes, pouring from time to time the juice which is collected in a form over. Remove from the oven and leave to rest for about 10-15 minutes.

Fry mushrooms in butter. Pour the cream into a saucepan and bring to a boil, then reduce the heat and reduce slightly the sauce. Add salt, black pepper and nutmeg.

Pour the cream and the mushrooms to the vessel in which you will serve the chicken. Put the chicken and sprinkle with pink pepper.

Serve e.g. with pasta or baked potatoes and salad.
